Keto Peanut Butter Chicken is a perfect mix of slight spiciness and sweetness. Takes about 10-15 minutes to prepare.
Ingredients Keto Peanut Butter Chicken
- 1 teaspoon each of ground cumin and ground coriander
- 16 ounces of skinless and boneless chicken thighs cut into 1-inch-long chunks
- 3 divided tablespoons of soy sauce
- 1 chopped red bell pepper
- Chicken broth, one cup
- Two tablespoons of Citrus juice
- 1/4 cup freshly chopped cilantro
- (3) cloves minced garlic, finely
- 1 teaspoon fresh ginger minced
- 3 ounces of finely minced onion
- Natural peanut butter, 1/2 cup
- Red curry paste, two tablespoons.
Instructions Keto Peanut Butter Chicken
- In a small bowl, thoroughly combine the ground cumin and coriander.
- Next, over medium-high heat, preheat a large skillet.
- Now, add the cubed chicken thighs to the skillet and top with 1.5 tablespoons soy sauce and 1 teaspoon of the spice mixture.
- Cook chicken for 5 minutes, then stirs in the minced garlic and red bell pepper.
- You can cook for an additional 5 minutes, or until the chicken is thoroughly cooked; then set aside.
- Place back the skillet on the stovetop and keep it heating on medium.
- Stir in the natural peanut butter, red curry paste, 1.5 tablespoons soy sauce, the remaining 1 teaspoon of the spice mixture, and chicken stock.
- For another 5 to 10 minutes, add the chicken, onion, and bell pepper to the sauce; until the sauce is rich and completely covers the chicken.
- Finally, add the lime juice and cilantro, then turn the heat off.
