Looking for healthy game day snacks? It’s true football season usually means greasy, heavy food – and hey, we’re all for indulging sometimes. But if you’re searching for a more balanced alternative, look no further. This recipe for peanut butter popcorn snack mix is super easy to make, requires no special equipment, and uses simple pantry ingredients. Everything comes together quickly, resulting in a sweet, salty, and crunchy snack. This is perfect to prepare in large batches to be enjoyed by the handful with friends and family next game day! 

Healthy Game Day Snack Mix by L’Orenta Nuts

Peanut butter popcorn snack mix 

This makes a large batch, enough to serve at your next game day get-together, or share with family and friends. 

Ingredients

– 12 cups plain popped popcorn

– 3/4 cup natural peanut butter 

– 3/4 cup maple syrup

– one teaspoon fine sea salt 

– 1 teaspoon pure vanilla extract

– one cup roasted salted peanuts 

– 1 cup dark chocolate pretzel bites

Instructions

  1. Start with 12 cups of freshly popped popcorn. Set aside. In the meantime, preheat oven to 250°F.
  2. In a medium pot, add the maple syrup and bring to a boil. Add the peanut butter, vanilla extract and salt. Stir together. Lower the heat and let simmer for 1-2 minutes. 
  3. Pour the mixture over the popcorn and, using a silicone spatula, gently mix to coat all the popcorn. 
  4. Divide the mixture between 2 large baking sheets lined with parchment paper, flatten with a spatula. 
  1. Bake for 45 minutes, stirring every 15 minutes. 
  2. Allow it to cool completely before breaking it into chunks and mixing in the salted peanuts, and dark chocolate pretzel bites. 

STORAGE SUGGESTIONS: This mix is best when fresh, but keeps well in a sealed plastic bag (make sure to squeeze out as much air as possible) for about 2-3 days.

CHANGE IT UP: Use your imagination! Feel free to use a different nut butter. Toss in dried cranberries, toasted shredded coconut flakes, or our sugar free dark chocolate almonds

Make your own peanut butter 

Making peanut butter at home is not only easy, but generally healthier and cheaper than buying it. Plus, you have all the control – add as much salt as you wish, a little honey if you want to make it sweet, or make a crunchy peanut butter by mixing in whole nuts at the end. 

-Makes 1 1/4 cups natural peanut butter 

-2 cups roasted shelled peanuts

-1 to 2 teaspoons melted coconut oil, if needed 

Add the peanuts to a medium food processor. Process until very smooth, stopping every minute to scrape down the sides of the bowl and keep your food processor from overheating. The mixture will be chunky at first, then thicken into a ball. Eventually, it will become creamy and smooth. The whole process should take about 10 minutes. If needed, add 1-2 teaspoons melted coconut oil to help it come together, but it’s usually not necessary. 

Store it in an airtight container at room temperature for up to 1 month. Enjoy!
