Flourless Walnut Cake With Three Ingredients Recipe
Serves 8
- 3½ cups walnuts
- 4 large free range eggs
- 1 cup rapadura, coconut or muscovado sugar
Optional:
- 1-2 tsp ground cinnamon
- Grated zest of one lemon
- Coconut flour or icing sugar for dusting
- Preheat oven to 160C, and grease or line a cake tin with baking paper.
- Process walnuts for 1-2 minutes in a food processor until nuts resemble a dense flour.
- In a large bowl, add ground walnuts, eggs and sugar. Mix until well combined.
- Pour mixture into prepared cake tin, and then bake in oven for 30-40 minutes, or until golden on top, and the middle springs back slightly when touched.
- Remove from oven and leave to cool for at least 15 minutes before carefully transferring to a plate.
- Once cooled, dust with coconut flour or icing sugar if desired. Will keep for 4-5 days in an airtight container.

Flourless walnut cake may be the quickest cake you’ll ever prepare. Surprisingly, just three ingredients are needed to make this delicious cake: walnuts, eggs, and organic and unprocessed sugar. To enhance the taste and flavor, add rapadura and coconut nectar (or even muscovado).

How To Make a Flourless Walnut Cake
Step 1
Set the oven to about 150°C and oil your cake pan or line it with baking paper.
Step 2
In a blender, process the walnuts for 180 seconds or until the nuts turn a thick flour.
Step 3
Put the ground walnuts, eggs, and sugar in a baking dish. Stir vigorously until everything is well blended.
Step 4
Slowly pour the final mixture into the ready cake pan and bake it for about 35 minutes.
Step 5
You will see the cake rise like a souffle and fall slightly as it starts to cool. If you do not overbake the cake, it will feel moist when ready. The cake should look solid and not wobble; the skewer stuck in the middle should come out without feeling wet when you touch it.
Step 6
Take it out of the oven and cool it for at least 20 minutes before moving it cautiously to a plate.
Step 7
When it’s cool, sprinkle it with coconut flour or confectioners sugar. It will stay fresh for a few days in an airtight container.
