Ingredients Scones
- Jam
- Thick cream
- Free-range egg (1)
- Pouring cream (150ml)
- Milk (150ml and a little more for brushing)
- Finely grated zest of 1 lemon
- Chopped walnuts (50g)
- Chopped and pitted dates (100g)
- Baking powder (1 teaspoon)
- A pinch of fine sea salt
- Self-raising flour (425g and a little more for dusting)
- Caster sugar (2 tablespoons)
Method Scones
Heat the oven while you sift the salt, baking powder, sugar, and flour into a large mixing bowl. Put the lemon zest, walnuts, and dates, then mix lightly.
Put the egg, cream, and milk into a small bowl and whisk. Create a well in the center of the mixing bowl containing the first mixture and pour in the whisked mixture. Create a soft dough by gently drawing the flour into the milk mixture with your fingers. Bring the dough together by kneading lightly to create a ball but desist from overworking it.
Put the dough on a lightly floured benchtop and use your fingertips to press lightly until they become flat. Make the dough 2-3cm thick after rolling it out gently. Use a 5-6cm scone to cut the dough into rounds. Or, use a biscuit cutter to do the cutting. Put them on a baking tray that does not stick, and make a space of 2-3cm between each one you place in the tray. Afterward, brush them with milk and put them in the oven to bake for about 20 minutes or more. They must turn golden before you remove them. Serve them warm with jam and thick cream to add extra deliciousness.
