Ingredients Broccoli Pistachio Soup
- Pepper and sea salt
- Creme fraiche for decoration
- Garlic clove (1)
- Olive oil (1 tsp)
- Chicken stock (600 ml)
- Pistachios (30 g / ¼ cup)
- Stem chopped florets broken broccoli (1 head / 300g)
- 1 small chopped onion or 3 spring onions scallions
Cooking Method Broccoli Pistachio Soup
Put the chopped garlic and onion/spring onions in olive oil and fry. Place the heat low and allow the garlic and onions to become sweet and tender. Do not make them brown, and you can occasionally stir as well as leave the lid on the pan.
Put chicken stock cube into boiling water to form chicken stock and ensure that you use a quality stock cube. Vegans are okay with using vegetable stock as an alternative. However, you must note that chicken stock provides better taste. Add the pistachios to the stock water to allow them to soften.
Next, put the broccoli in the steamer and allow it to steam for about 5 minutes. Or a pot of boiling water measuring 1 – 2 cm. This method will steam most of the broccoli as the lid is still on. You can use some florets for decorating as you serve your broccoli pistachio soup.
