Ingredients Blueberry Coconut Chia Pudding
- 1½ cups of coconut milk (make sure to stir the can to mix the cream and water before using)
- ¼ cup of chia seeds
- 1 tablespoon honey
- Salt to taste
- Vanilla extract, ½ teaspoon
- almond extract, ¼ teaspoon
- thawed ½ cup of frozen wild blueberries (or fresh)
- Honey for spreading on top and
- 2 teaspoons of unsweetened coconut flakes
Directions Blueberry Coconut Chia Pudding
- Shake the can of coconut milk before using it to ensure that the cream and water are thoroughly combined.
- In a bowl, combine the coconut milk, chia seeds, honey, salt, and flavorings.
- Wrap in plastic and place in the fridge for at least three hours.
- When it has thickened, spoon it into dishes for serving and, if you like, garnish with blueberries, çcoconut flakes, and other honey.
