Ingredients Blueberry Almond Tart
- Icing sugar
- Blueberries punnets (2 x 125g)
- Almond extract (few drops)
- Beaten eggs (2)
- Ground almonds (175g)
- Caster sugar (175g)
- Softened butter (85g)
Method Blueberry Almond Tart
Preheat the oven. Place the sugar and butter into a bowl, then beat them for about 1 minute or more until they become fluffy and light. Put the almond extract, egg, and almonds into the bowl and stir.
Put half of the blueberries into the bowl and, using a spoon, put them into the pastry case. Use a metal spoon to smoothen the mixture’s top, then evenly spread the remaining blueberries and push them in lightly.
Put the mixture in the oven and bake for about 50 minutes or until the pastry and filling turn golden and the pastry is crisp. Also, do not remove it from the oven until the filling is firm when you touch it.
After taking the tart from the oven, allow it to cool off for about 10 minutes, then serve on a plate. Pour a little icing sugar and serve the tart warm or at room temperature.
