Ingredients Almond Cake
- Sour cream (1)
- Room temperature large eggs (2)
- Vanilla extract (1 teaspoon)
- Almond extract (2 teaspoons)
- Granulated sugar (1 ½ cups)
- Butter (1 ½ cup)
- Salt (½ teaspoon)
- Baking soda (½ teaspoon)
- Baking powder (1 ½ teaspoon)
- Blanched sliced almonds (1 cup)
- All-purpose flour (2 cups)
Method Almond Cake
Allow the oven to heat up to 325 degrees Fahrenheit. Bring out your 9-inch springform pan and apply butter to the bottom and side. Grind the almonds to a fine state with a blender, food processor, nut grinder, or spice.
Bring out a medium bowl, mix the salt, baking soda, baking powder, ground almonds, and flour, and place separately. Cream the sugar and butter and mix them using a stand or electric mixer for about 5 minutes. Ensure you do not stop till the mixture becomes fluffy and light.
Bring out the eggs and beat them one at a time. When they mix well, add the sour cream, vanilla extracts, and almonds. Also, put the flour mixture and beat it to the point it blends well without any dry flour streaks.
Put the dough in the springform pan. Using a spatula, smoothen the batter and put in the almonds. Allow baking for about 1 hour or till the top becomes golden. Put parchment paper on top of it for the last 10 minutes if the cake begins to brown quickly.
Carefully keep the pan on a wire rack and remove its sides to cool off. Serve after sifting the powdered sugar over the cake and slicing them into wedges.
