Most sour candies’ manufacturers incorporate one or two types of acids into their basic recipes. Each form of acid provides a different level of sourness to the final product. The trick is in finding the perfect alchemy; mixing just the right amount of each of these acids to create the ideal balance and flavor. As to why our taste buds react so strongly to sour candy? That’s due to the high pH levels in the acids – as a rule, the higher the pH level, the more sour the candy.
Perhaps the two most used acids, citric acid and malic acid are common components of sour candy. The first naturally occurs in citrus fruits. Oftentimes, manufacturers choose to make their own citric acid by feeding sugar to microorganisms, that will then ferment and expel an acidic byproduct.
On the other hand, malic acid is a natural compound that appears in fruits like apples and tomatoes. When used in candy making, it provides an even more intense sour flavor. The acid is usually coated in palm oil, so, as it dissolves in the mouth, it creates a “slow-burn” effect that releases the acidity slowly, prolonging the experience.
The most satisfying way to deliver the sharp sensation sour lovers crave is to load it onto the surface of the candy. The infamous sand coating on the outside of so many sour gummies is basically a form of acid or acid blend. The combination can include different acids, including tartaric, lactic, and fumaric acid, as well as citric and malic acid. Having a concentrated amount of the key ingredient on the candy’s surface is what provides that immediate flavor rush the moment you bite into the candy.
