Kiwi Fruit Cake, If you are a huge fan of kiwi and have never enjoyed a tasty fruit cake made with kiwi then you need to give this recipe a try.
Ingredients Kiwi Fruit Cake
- Lightly beaten eggs (2)
- Chopped kiwi fruit (¾ cup)
- Sugar (1 cup)
- Honey (2 tablespoon)
- Butter (125g)
- Ground cinnamon (½ teaspoon)
- Bicarbonate of soda (1 teaspoon)
- Baking powder (1 ½ teaspoon)
- Plain flour (2 cups)
Cream Cheese Frosting
- Juiced lemon (1)
- Sugar (2 tablespoon)
- Cream cheese (250g)
Method Kiwi Fruit Cake
Grease a springform pan lightly and use paper to line the base. Heat up the oven to 160 degrees Celsius. Sift the cinnamon, bicarbonate of soda, baking powder, and flour in a bowl and keep in a corner.
Put the sugar, honey, and butter in a large bowl and mix till it becomes creamy. Put sifted flour, eggs, and kiwi fruit before mixing properly. Pour the mixture into the pan and bake for 40-45 minutes. You can only remove it from the oven if an inserted skewer comes out clean.
Next, stand for about 10 minutes and leave to cool on a rack. After adding frosting, you can decorate the top and sides with kiwi slices.
Cream cheese frosting: Smoothen the cream cheese by beating properly. Put the lemon juice and sugar and beat until it is smooth. Keep in the refrigerator for about 30 minutes, then spread it on the already cooled cake. You can then take a piece of this kiwi cake and enjoy.
